Shrimp Stew

1 ½ lbs. jumbo shrimp

1 red bell pepper, diced

1 14.5 oz. can diced tomatoes

1 14 oz. can light coconut milk

4 scallions, sliced thin, white and green separated

Juice of ½ lime

½ cup cilantro, chopped

4 cloves garlic, minced

½ teas. crushed red pepper flakes

1 teas. olive oil

¼ teas. kosher salt

Peel and devein the shrimp.  Heat the olive oil in a medium pot over medium-low heat.  Add the red bell peppers and sauté about 4 minutes until the peppers are soft.  Add the scallion whites, ¼ cup cilantro, the garlic and red pepper flakes and cook for 1 minute.  Add the tomatoes, coconut milk and ¼ teaspoon of kosher salt to the pot. Increase the heat and bring the mixture to a bowl.  Cover the pot, reduce heat and simmer on low for about 10 minutes to thicken the sauce and allow flavors to blend. Add the shrimp and cook until the shrimp are opaque and cooked through, about 5-6 minutes.  Add the lime juice. Top soup with remaining green scallions and cilantro.

Salmon with Basil and Parmesan

4  salmon fillets, 5 oz. each

3 Tbsp. grated Parmesan cheese

Juice from ½ lemon

3 Tbsp. mayonnaise

6 fresh basil leaves, minced

salt and pepper to taste

Remove any skin from the salmon fillets.  Preheat oven to 425 degrees F. Spray a baking sheet with olive oil cooking spray.  Season the salmon with the lemon juice and salt and pepper to taste. In a small bowl mix together the mayonnaise, basil and 2 tablespoons of the grated Parmesan cheese.  Place the salmon fillets on the prepared baking sheet. Spread this cheese mixture over the top of the salmon covering the top of the salmon fillet completely. Sprinkle the remaining Parmesan cheese over the top of the salmon fillets.  Place baking sheet in preheated oven and bake 10-12 minutes depending on thickness of the salmon.

Salmon fillets may be cooked in an air fryer instead of the oven.  If using an air fryer preheat it to 400 degrees F. Air fry the salmon fillets in batches for 7 minutes or longer depending on the thickness of the salmon.

Cajun Flounder with Tomatoes

4 6 oz. pieces of flounder (any white fish may be used in place of flounder)

2 ½ cups chopped tomatoes

¾ cups green bell pepper, diced

¾ cup onion, chopped

2 cloves garlic, minced

1 teas. olive oil

1 Tbsp. Cajun seasoning

Place the olive oil in a deep skillet over medium heat and add the onion and garlic to the hot oil.  Cook the onion and garlic for a few minutes until soft. Add the tomatoes, peppers and Cajun seasoning to the skillet and cook and stir until the tomatoes are soft, 2-3 minutes.  Place the fish fillets in the sauce, cover the skillet and cook on medium-low heat until the fish flakes easily with a fork, about 12-15 minutes. To serve, place the fish on a plate and spoon the sauce over it.
