Spiced Nuts, Oyster Cracker Snack, Peanut Butter Popcorn, Chex Snack, Chocolate Saltines

Spiced Nuts

  • 3 cups pecan halves
  • ½ cup butter or margarine
  • ½ cup sugar
  • 1 tsp. cinnamon
  • ½ tsp. ginger
  • ½ tsp. nutmeg
  • 3 Tbsp. sugar

In a large bowl combine the cinnamon, 3 Tbsp. sugar, nutmeg and ginger and set aside. Melt the butter in a large skillet over medium heat. Stir in the nuts and the ½ cup of sugar. Cook, stirring occasionally, until sugar melts and nuts are slightly brown, about 8-12 minutes. Stir the caramelized nuts into the mixture in the large bowl. Spread the coated nuts on waxed paper and cool completely. Break the clusters into individual nuts. Store the nuts in a covered container.

Oyster Cracker Snack

  • 16 oz, oyster crackers
  • 1 cup oil
  • 1 pkg. (dry) Hidden Valley Ranch Dressing
  • 1 ½ teas. dill weed
  • ½ teas. garlic salt
  • ½ teas. lemon pepper

In a large bowl mix together the oil, ranch dressing, garlic salt, dill weed and lemon pepper. Stir the oyster crackers into this mixture. Spoon the oyster cracker snack into an airtight covered container. Mix well before serving.

Peanut Butter Popcorn

  • 2 qt. popped corn
  • ½ cup sugar
  • ½ cup chunky peanut butter
  • ½ cup honey
  • ½ teas vanilla

Place the sugar and honey in a saucepan and cook to a rolling boil. Remove the saucepan from the heat and stir in the peanut butter and vanilla. Pour the peanut butter mixture over the popped corn and stir to coat.

Chex Snack

  • 1 box Chex cereal
  • 1 small bag chocolate chips
  • 1 cup peanut butter
  • 3 Tbsp, 10X sugar
  • ¼ lb. butter or margarine

In a large sauce pan melt the butter or margarine. Stir in the peanut butter and chocolate chips and melt together. Stir in the Chex cereal. Roll this mixture into small balls and cool on waxed paper. Sprinkle 10X sugar over the Chex mix balls.

Chocolate Saltines

  • 1 sleeve saltine crackers
  • 1 small bag chocolate chips
  • ½ lb. butter or margarine
  • 1 cup sugar
  • Crushed walnuts or pecans, optional

Preheat oven to 350 degrees F. Spray a cookie sheet with cooking spray. Line the crackers on the cookie sheet with the salty side up. In a small saucepan melt the butter over medium heat. Add the sugar and bring mixture to a bowl. Lower heat and heat until caramelized. Remove butter and sugar mixture from stove and pour over the saltines on the cookie sheet. Bake the crackers in the preheated oven until golden brown (about 10 minutes). Remove baking sheet from oven and put chocolate chips over the crackers. When chips start to melt smooth over the crackers. Sprinkle crushed walnuts or pecans over the chocolate chips, if desired. Allow crackers to cool, break into pieces and enjoy.
