Spinach Dip

1 10 oz. package frozen spinach, thawed

1 cup shredded part skim mozzarella cheese

1/3 cup Parmigiano Reggiano

½ cup light sour cream

5 Tbsp. light mayonnaise

¼ cup scallions, chopped

1 clove garlic, crushed

fresh pepper to taste

Squeeze as much excess liquid as possible from the thawed spinach.  Preheat oven to 375 degrees F. Spray a baking dish with cooking spray.  In a mixing bowl combine the spinach, mozzarella cheese, Parmigiano Reggiano, sour cream, mayonnaise. scallion, garlic and pepper.  Spoon the spinach mixture into the prepared baking dish and place in preheated oven. Bake for 20-25 minutes until the dip is hot and the  cheese is melted.

Spicy Shrimp Dip

2 cups cooked, peeled large shrimp, diced

4 oz. reduced fat cream cheese, softened

½ cup reduced fat sour cream

¾ cup reduced fat Mexican blend shredded cheese

½ cup hot sauce

1 teas. white wine vinegar

Preheat oven to 375 degrees F. Spray an 8×8 or 9×9 baking dish with cooking spray.  In a mixing bowl combine the cream cheese, sour cream, hot sauce, vinegar and ¼ cup of the cheese.  Mix these ingredients until smooth and then stir in the shrimp. Spoon this mixture into the prepared baking dish.  Place baking dish in oven and bake for about 20-25 minutes until the dip is hot. Remove baking dish from oven and top the dip with the remaining cheese.  Return dish to oven and bake for an additional 4-5 minutes or until cheese is melted.

Chicken Cheesesteak Dip

½ lb. thin sliced chicken cutlets

4 oz. light cream cheese, softened

¼ cup light mayonnaise

½ cup light sour cream

4 oz. shredded mild provolone cheese

1 cup onion, diced

1 cup green pepper, diced

salt and pepper to taste

Preheat oven to 350 degrees F.  Spray a baking dish with cooking spray.  Sprinkle the chicken cutlets on both sides with salt and pepper to taste.  Spray a large skillet with cooking spray and place over high heat. Add the chicken to the skillet and cook for about 1 minute on each side until the chicken is cooked through.  Remove chicken from pan, slice the chicken into thin pieces and set aside. Respray the skillet with cooking spray, reduce heat to medium-low and add the onions and peppers to the skillet.  Cook for 5-6 minutes until the onions and peppers are soft. In a mixing bowl combine the cream cheese, mayonnaise, sour cream, provolone cheese, cooked chicken and cooked onion and peppers.  Spoon the mixture into the prepared baking dish and place baking dish in the preheated oven. Bake the dip for 20-25 minutes until it is hot, and the cheese is melted.
