Sweet Potato and Turkey Chili, Buffalo Chicken Meatballs

Sweet Potato and Turkey Chili

  • 1 ¼ lbs. 93% lean ground turkey
  • 1 medium sweet potato, peeled and diced
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 10 oz. can diced tomatoes with green chilies
  • 8 oz can chili tomato sauce
  • ¾ cup water
  • ½ teas. cumin
  • ¼ teas. chili powder
  • ¼ teas. paprika
  • 1 bay leaf
  • salt and pepper to taste

Brown the turkey in a large skillet over medium-high heat. Break the meat up into smaller pieces as it cooks. Season the meat with salt, pepper and cumin. When the meat has browned add the onion and garlic. Reduce the heat to medium and cook for 3 minutes. Add the tomatoes, sweet potato, tomato sauce, water, chili powder, paprika and bay leaf. Cover the skillet and simmer the chili over medium-low heat until the potatoes are soft and cooked through, about 25 minutes. Stir the chili occasionally while it simmers. If needed, add another ¼ cup of water. Remove bay leaf before serving. Recipe makes 5 servings Estimated WW Smart points 5 per serving.

Buffalo Chicken Meatballs

  • 1 ¼ lbs. ground chicken
  • 1 large egg
  • 2 scallions, chopped
  • 1/3 cup minced celery
  • 1/3 cup minced carrot
  • ¼ cup panko bread crumbs
  • 1 clove minced garlic
  • 1/3 cup hot sauce
  • salt and pepper to taste

Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray and set aside. Use clean hands to combine the ground chicken, panko bread crumbs, egg, scallions, celery, carrot and garlic in a large bowl. Season this mixture with salt and pepper. Shape the mixture into 26 round meatballs, use about 1/8 cup of chicken mixture for each meatball. Place meatballs on prepared baking sheet and bake in preheated oven for 16 to 18 minutes or until meatballs are golden and cooked through. Place meatballs in a bowl and pour the hot sauce over the meatballs. Toss gently to coat the meatballs. Recipe makes 13 servings Estimated WW Smart points 2 per serving.
