Sweet Potatoes 

Sweet potatoes make a nice side dish with a meal.  There are lots of ways to prepare the sweet potato.  Here are a few suggestions. 

Baked sweet potatoes

  • 3 large sweet potatoes
  • 2 Tbsp olive oil 
  • 1 teas cinnamon
  • ¼ teas sugar 

Preheat oven to 350 degrees F.  Spray bottom of baking dish with cooking spray.  Wash and peel the sweet potatoes.  Cut into chunks.  Place cut sweet potatoes in bowl and toss with the olive oil.  In small bowl mix the cinnamon and sugar together.  Sprinkle cinnamon and sugar over sweet potatoes and again toss to coat.  Place sweet potatoes in prepared pan and bake in preheated oven for about 1 hour or until potatoes are soft when pricked with a fork. 

Candied sweet potatoes with marshmallows 

  • 4 lbs. sweet potatoes
  • 3 cups miniature marshmallows 
  • 1 ¼ cups butter or margarine
  • 1 ¼ cups brown sugar 
  • 1 teas ground cinnamon
  • ½ teas ground nutmeg 

Preheat oven to 400 degrees F.  Spray 9×13” baking dish with cooking spray.  Peel and quarter the sweet potatoes.  Bring a large pot of water to a boil and add the sweet potatoes to the boiling water.  Cook until potatoes are almost fork tender.  You want to sweet potatoes to be slightly underdone.  In large saucepan over medium heat melt the butter or margarine.  Add the brown sugar, 2 cups of the marshmallows, the cinnamon and nutmeg.  Cook, stirring often, until marshmallows are melted.  Stir potatoes into marshmallow mixture.  Mash some of the sweet potatoes while stirring and break up other sweet potatoes into bite size pieces.  Transfer sweet potato mixture to prepared pan.  Bake in preheated over for 15 minutes.  Remove pan from oven and cover casserole with remaining marshmallows.  Return pan to oven and bake until marshmallow topping is golden brown. 

Fried sweet potatoes

  • 6 sweet potatoes
  • 2 cups packed light brown sugar 
  • ½ cup butter 

Peel the sweet potatoes.  Bring a large pot of water to a boil.  Add the sweet potatoes and boil for about 4-5 minutes.  Drain the sweet potatoes and cut into slices. 

In large skillet melt the butter over medium heat.  Stir in the brown sugar until it is dissolved.  If necessary, add more butter.  Add the boiled, sliced sweet potatoes and fry until golden brown and fork tender.  Occasionally turn the sweet potatoes over so they brown evenly. 

Mashed sweet potatoes

  • 6 sweet potatoes
  • 3/4 cup milk 
  • ½ cup butter or margarine
  • ¼ cup maple syrup 

Peel sweet potatoes and cut into chunks.  Bring a large pot of water to a boil.  Add the potatoes to the boiling water and cook until fork tender, 20-30 minutes.  Drain the potatoes saving some of the water.  In large mixing bowl, use an electric mixer on low speed to blend the potatoes.  Add the milk slowly until sweet potatoes reach the consistency you want.  You may need to use either more or less of the milk.  If the ¾ cup of milk does not give you the desired consistency you can either add more milk or some of the retained water from cooking the sweet potatoes.  Finally, add the butter and maple syrup to taste.  You may also add some salt and pepper to taste if you choose to do so.
