Vegetable Casserole Dishes 

Here are a few recipes that are not very hard to make.  You assemble the ingredients in a casserole dish and bake in the oven. 

Scalloped Zucchini 

  • 2 small zucchinis. peeled and diced
  • 1 egg 
  • ¼ cup whole milk1 oz pepper cheese 
  • 1 small onion, chopped
  • 1-2 slices bread torn into small pieces 
  • 4 oz fresh or canned, drained mushrooms
  • 1 oz diced kielbasa, optional 

Heat oven to 350 degrees.  Beat the egg with the milk.  Combine all the ingredients in a bowl, mix well and then pour mixture into a buttered casserole dish. Bake casserole for 30 minutes.   

Broccoli Casserole 

  • 1 head fresh broccoli
  • 3 eggs, beaten 
  • ½ large onion, chopped6 oz shredded cheddar cheese 
  • 4 Tbsp. butter or margarine
  • ½ sleeve crushed crackers 
  • 2 Tbsp flour
  • ½ c melted butter or margarine 
  • ½ cup water
  • ¼ c milk 

Notes:  Velveeta cheese may be substituted for the cheddar cheese.  If you use the Velveeta cheese you should eliminate the milk. Instead of using the crushed crackers you can substitute chopped walnuts. Grease 1 ½ quart casserole dish and set aside.  Heat oven to 350 degrees. Meantime, wash the broccoli under running water.  Cut florets from stems leaving about 2 inches of stem attached.  Break or cut florets into smaller pieces.  If planning to include stems, remove any leaves attached to the stem.   

Put 2 inches water in a saucepan with a steamer basket. Cover pan and bring water to boil.  Add broccoli to the basket in the pan with the boiling water, recover and steam broccoli for 3 -4 minutes.  Remove basket with broccoli from pan, drain broccoli.While broccoli is cooking sauté the chopped onion in butter or margarine.  Remove the pan from the heat and add the flour, water, eggs and milk.  Put the pan back on the stove on a low heat and add the cheese.  Stir constantly until the cheese is melted.  Add the broccoli to the cheese mixture.  Pour this into the greased casserole, top with either the crushed crackers or the chopped walnuts, pour the melted butter over the top, place casserole in heated oven and bake for ½ hour. 

Corn Pudding 

  • 2 cans corn 17oz each, drained
  • 4 eggs, well beaten 
  • 1 stick butter or margarine
  • 2 tsp. baking powder 
  • 3 Tbsp sugar
  • 3 Tbsp melted butter or margarine 
  • 2 Tbsp flour
  • 3 Tbsp brown sugar 
  • ½ c cream
  • ¼ tsp ground cinnamon 

Heat oven to 350 degrees.  In a saucepan heat butter with sugar and stir until melted.  Stir in the flour and remove saucepan from heat.  Stir in cream, beaten eggs and baking powder and mix well.  Add the corn, stir and pour the mixture into a 2-quart greased casserole dish.  Bake for 45 minutes or until a knife inserted in the center of the casserole mixture comes out clean.  Spread the melted butter over the top of the casserole dish, sprinkle with the brown sugar, and bake for an additional 5 minutes.
