Veggie Pizza with Cauliflower Crust

Crust:

  • 1 cup chopped cauliflower
  • 1 egg
  • ½ cup shredded low-fat mozzarella cheese
  • 1 teas. dried oregano
  • ½ teas. crushed garlic

Shred the cauliflower in a food processor. Microwave the shredded cauliflower with a tablespoon of water for 8 minutes. Drain. Preheat oven to 350 degrees F. Spray a pizza pan with cooking spray. In a mixing bowl stir together the cauli flower, egg, cheese, garlic and oregano. Spread the cauliflower/cheese crust mixture over the pizza pan. Place pizza pan in preheated oven and bake for 10-15 minutes. Remove pan from oven and top with sauce and vegetables.

Topping:

  • ½ cup pizza sauce
  • ½ cup chopped mushrooms
  • ½ medium onion, chopped
  • ¼ cup shredded low-fat mozzarella cheese
  • ½ medium green bell pepper, chopped
  • ½ medium red bell pepper, chopped

Spread the pizza sauce over the crust and then cover the sauce with the mushrooms, onion, bell peppers and cheese. Return pizza pan to oven and bake for an additional 10-15 minutes. Recipe makes 8 servings–1 slice per serving.

Basil, White Bean and Sun-Dried Tomato Pizza

  • 1 10 oz. thin crust pre-made pizza crust
  • 1 15 oz can navy beans, rinsed and drained
  • ½ cup chopped sun-dried tomatoes
  • 2 cloves chopped garlic
  • ¼ teas. dried oregano
  • 1 cup shredded fresh basil leaves
  • ½ cup shredded, reduced fat mozzarella cheese

Preheat oven to 425 degrees F. Place the sun-dried tomatoed in a bowl and pour boiling water over them to just cover the tomatoes. Allow tomatoes to stand in the water for 10 minutes to soften them. Drain the tomatoes and chop them into thin strips. Place the beans, garlic and oregano in a food processor and blend until smooth. Place the pizza crust on an ungreased pizza pan or cookie sheet. Spread the bean paste over the pizza crust. Sprinkle the sun-dried tomatoes, basil and cheese over the bean paste. Place pan in preheated oven and bake until cheese is melted, about 10 minutes. Remove from oven and cut into 6 slices. Recipe makes 6 servings Estimated WW Smart points 5 per serving.

Individual Pita Pizza

  • 1 whole wheat pita
  • ¼ cup tomato sauce
  • ¼ cup fat free mozzarella cheese
  • 1 teas. dried oregano

Sliced fresh veggies such as peppers, mushrooms, onions, etc., optional Preheat oven to 375 degrees F. Place pita on ungreased pan and spread tomato sauce over the pita. Add any vegetables you are using. Sprinkle the cheese over the tomato sauce (and veggies) and then sprinkle the oregano over the top.
