Watermelon Salad, Strawberry Avocado Salad, Spinach and Strawberry Salad, Strawberry Salad with Crusted Goat Cheese

Watermelon Salad

  • 2 small watermelon
  • 2 bananas cut into bite size pieces
  • 1 lb. seedless grapes
  • 2 apples, peeled, cored and chopped
  • 1 15 oz. can diced pineapple in juice, drained

Cut each watermelon in half lengthwise. Use a melon baller to remove the insides of the watermelon. The watermelon rinds will be used as serving bowls. In a mixing bowl combine the watermelon balls, bite size pieces of banana, seedless grapes, pineapple, and chopped apples. Divide the fruit salad among the 4 reserved watermelon rind serving bowls and serve.

Strawberry Avocado Salad

  • 10 strawberries, sliced
  • 1 avocado, peeled and sliced
  • 2 cups salad greens, torn into bite size pieces
  • 1 Tbsp. sugar
  • 1 Tbsp. olive oil
  • 2 teas. honey
  • 1 Tbsp. cider vinegar
  • 1 teas. lemon juice

In a small bowl whisk together the sugar, olive oil, honey, vinegar and lemon juice. Place the salad greens in a serving bowl and top with the sliced avocado and strawberries, Drizzle the dressing over the salad. Salad may be served immediately or refrigerated for up to 2 hours before serving.

Spinach and Strawberry Salad

  • 4 bunches spinach, rinsed and torn into bite size pieces
  • 4 cups sliced strawberries
  • ½ cup vegetable oil
  • ¼ cup white wine vinegar
  • 1 ½ Tbsp. sugar
  • ¼ teas. paprika
  • 2 Tbsp. sesame seeds
  • 1 Tbsp. poppy seeds

Toss the spinach and strawberries together in a large bowl. In another bowl whisk together the oil, vinegar, sugar, paprika, sesame seeds and poppy seeds. Pour this dressing over the spinach and strawberries and toss to coat.

Strawberry Salad with Crusted Goat Cheese

Crusted Goat Cheese:
  • 3 Tbsp. chopped almonds
  • 3 Tbsp. chopped craisins
  • 4 oz. soft goat cheese log, cold

With your hands, roll the cheese into 12 small balls. In a small bowl combine the nuts and craisins. Roll the cheese balls in the nut mixture and refrigerate until ready to serve.

Dressing:
  • 1 Tbsp. red wine vinegar
  • 1 ½ Tbsp. cider vinegar
  • 2 ½ Tbsp. olive oil
  • 1 Tbsp. honey
  • 1 teas. shallots, minced

Place all the ingredients for the dressing in a small bowl and whisk to combine.

Salad:
  • 8 cups mixed baby greens
  • 1 ½ cups sliced strawberries

Place the greens and strawberries and the salad dressing in a large bowl and toss to combine.
Add the crusted goat cheese and serve.
