Air Fryer Cajun Shrimp with Vegetables

Air Fryer Breaded Pork Chops

6 ¾ inch center cut boneless pork chops (5 oz. each)

1 egg beaten

½ cup panko crumbs

1/3 cup crushed cornflake crumbs

2 Tbsp. grated parmesan cheese

½ teas. garlic powder

½ teas. onion powder

¼ teas. chili powder

1 ¼ teas. sweet paprika

salt and pepper to taste

olive oil spray

Preheat air fryer to 400 degrees F.  Lightly spray basket with olive oil spray.  Trim fat from pork chops. Season pork chops with salt and pepper on both sides.  In a shallow bowl combine the panko, cornflake crumbs, parmesan cheese, paprika, garlic powder, onion powder, chili powder, and salt and pepper to taste.  In another shallow bowl place the beaten egg. Dip each pork chop first in the egg and then in the crumb mixture. Place some of the pork chops in a single layer in the air fryer and spritz with olive oil spray.  Cook chops for about 6 minutes and turn over and cook another 6 minutes. Set first batch of cooked chops aside and continue cooking remaining pork chops.

Air Fryer Turkey Breast

1 4 lb. turkey breast with bone and skin

1 Tbsp. olive oil

½ teas. poultry seasoning

salt and pepper to taste

Preheat air fryer to 350 degrees F. Rub ½ the oil all over the turkey breast.  Season both sides of the turkey breast with salt and pepper and poultry seasoning.  Spread the remaining oil over the turkey breast skin. Place turkey breast in air fryer with the skin side down and cook for 20 minutes.  Turn turkey breast over and cook until internal temperature reaches 160 degrees F. using an instant-read thermometer, 30-40 minutes. Allow turkey breast to rest for 10 minutes before carving.

Air Fryer Cajun Shrimp with Vegetables

1 lb. jumbo shrimp, peeled and cleaned

6 oz. fully cooked chicken Andouille sausage, sliced

1 medium zucchini, sliced

1 medium yellow squash, sliced

1 large red bell pepper, seeded and sliced into 1-inch pieces

1 Tbsp. Cajun seasoning

2 Tbsp. olive oil

salt and pepper to taste

Preheat air fryer to 400 degrees F.  Combing the Cajun seasoning and shrimp in a large bowl and toss to coat.  Add the sausage, zucchini, yellow squash, bell pepper and salt and pepper and toss with the oil.  Transfer this mixture to the air fryer. ( You may need to cook the shrimp and vegetables in batches depending on the size of the air fryer basket.)  Cook for 8 minutes shaking the basket 2 or 3 times. If you need to cook in batches set the first batch aside and repeat the cooking with the second batch.  Return the first batch to the air fryer when the rest is finished and heat for 1 minute.
