Avocado Stuffed with Bacon 

4 avocados 

8 slices bacon 

½ cup butter or margarine 

¼ cup brown sugar 

¼ cup red wine vinegar 

2 cloves garlic, minced 

1 Tbsp. soy sauce 

salt to taste 

Cut avocados in half and remove pits.  Place a large skillet over medium high heat and add the bacon to the pan.  Cook the bacon, turning occasionally, until the bacon is evenly browned, about 10 minutes.  Drain bacon slices on paper towels and crumble the cooked drained bacon.  Place a small saucepan over medium heat and add the butter or margarine, brown sugar, vinegar, soy sauce and garlic and cook and stir mixture for about 10 minutes or until the sugar is dissolved.  Sprinkle salt over the avocado halves and then fill each half avocado with the crumbled bacon.  Drizzle the sauce over the filled avocado.

Avocado Stuffed with Tuna 

2 avocados 

1 12 oz. can solid white tuna, drained 

3 green onions, sliced thin 

½ red bell pepper, chopped 

1 Tbsp. mayonnaise 

1 dash balsamic vinegar 

salt and pepper to taste 

Cut avocados in half and remove pits.  In a bowl mix together the tuna, onion. bell pepper, mayonnaise, balsamic vinegar and salt and pepper.  Stuff the avocado halves with the tuna salad mixture. 

Recipe makes 4 servings 

Baked Avocado Stuffed with Beans 

3 avocados 

1 21 oz. can baked beans (flavor of your choice) 

¾ cup shredded cheddar cheese 

Preheat oven to 350 degrees F.  Cut avocados in half, remove pits and remove a small portion of each avocado with a teaspoon.  Fill each avocado half with the baked beans and top with the shredded cheese.  Place avocados on a baking sheet.  Place baking sheet in preheated oven and bake for about 15 minutes or until the cheese has melted. 

Recipe makes 6 servings 

Baked Avocado Stuffed with Chicken 

4 avocados 

2 boneless skinless chicken breasts,  cooked and shredded 

4 oz. cream cheese, softened 

¼ cup Parmesan cheese 

¼ cup chopped tomatoes 

1 pinch cayenne pepper (or to taste) 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray a muffin tin with cooking spray.  Cut avocados in half and remove pits.  Place one avocado half into each muffin cup.  (Using muffin tins will keep the avocado halves standing up) Scoop out some of the flesh from the center of each avocado and place in a mixing bowl.  Add the chicken, cream cheese, tomatoes, salt, pepper and cayenne pepper to the bowl with the avocado flesh and mix well.  Spoon the chicken mixture into the avocado halves and sprinkle with the Parmesan cheese.  Place muffin pan in preheated oven and bake the avocados for 8-10 minutes or until the cheese has melted.
