Baked Pesto Chicken

Baked Garlic Chicken 

4 boneless skinless chicken breast halves 

2 cloves garlic, crushed 

¼ cup Italian seasoned breadcrumbs 

¼ cup grated parmesan cheese 

¼ cup olive oil 

Preheat oven to 425 degrees F.  Spray a shallow baking dish with cooking spray.  Place a small saucepan over low heat, add the olive oil and garlic and heat until warmed, 1-2 minutes.  Transfer heated garlic and oil to a shallow bowl.  Combine the parmesan cheese and breadcrumbs in another shallow bowl.  Dip the chicken breasts in the olive oil-garlic mixture and then in the breadcrumb mixture.  Turn the chicken breast to coat evenly.  Transfer the coated chicken to the prepared baking pan.  Place the baking pan in the preheated oven and bake for about 30-35 minutes or until the chicken is no longer pink and the juices run clear.  An instant read thermometer inserted into the center of the chicken should read at least 165 degrees F

Baked Cheddar Chicken 

3 boneless skinless chicken breast halves, cut in half 

1 cup shredded cheddar cheese 

½ cup Italian seasoned breadcrumbs 

1 cup crispy rice cereal 

2 tablespoons melted butter or margarine 

1 egg 

½ cup flour 

1 teas. garlic powder 

1 Tbsp. milk 

salt and pepper to taste 

Preheat oven to 350 degrees F.  Spray a medium baking dish with cooking spray.  Mix the flour, salt, pepper, and garlic powder in a bowl.  In another bowl beat the egg and milk together.  In a third bowl mix the parmesan cheese, cereal and breadcrumbs together.  Dredge the chicken first in the flour mixture.  Next dip the chicken in the egg mixture.  Third press the chicken into the breadcrumb mixture.  Turn over the chicken in the breadcrumbs to coat well.  Place coated chicken in prepared baking dish and drizzle the melted butter or margarine over the chicken. Place baking pan in preheated oven and bake the chicken breasts for about 35 minutes until the coating is golden brown and the chicken juices run clear.  Instant read thermometer inserted into the center of the chicken should read at least 165 degrees F.

Baked Pesto Chicken 

4 boneless skinless chicken breasts 

4 teas. basil pesto 

1 medium tomato, sliced thin 

6 Tbsp. shredded mozzarella cheese 

2 teas. grated parmesan cheese 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray a baking sheet with cooking spray.  Season chicken breasts with salt and pepper.  Place chicken breasts on prepared baking sheet and spread 1 teaspoon of pesto over each piece of chicken.  Place baking sheet in oven and bake for about 15 minutes or until chicken is no longer pink in the center.  Remove pan from oven and top each chicken breast with tomato slices, mozzarella cheese and parmesan cheese.  Return baking sheet to oven and bake for an additional 3-5 minutes or until the cheese is melted.
