Beets with Feta Cheese
Beet, Bean and Apple Salad

Beets and Sweet Potatoes 

6 medium beets, peeled and cut into chunks 

3 medium sweet potatoes, washed and cut into chunks 

1 large sweet onion, chopped 

2 ½ Tbsp. olive oil 

1 teas. sugar 

1 teas. garlic powder 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Place the beets in a bowl and toss the beets with ½ tablespoon of the olive oil.  Spread the coated beets in a single layer on a baking sheet.  Place the baking sheet with the beets in the preheated oven and bake for 15 minutes.  While the beets are baking mix the remaining 2 tablespoons of olive oil with the garlic powder,  salt, pepper and sugar in a large resealable plastic bag.  Add the sweet potatoes and onions to the mixture in the bag and shake to coat the vegetables.  Remove the baking sheet with the beets from the onion and mix the sweet potato mixture with the beets on the baking sheet.  Return baking sheet to oven and bake for another 45 minutes or until the vegetables are done.  Stir the sweet potato and beet mixture after 20 minutes. 

Recipe makes 6 servings 

Beets with Feta Cheese 

4 beets, trimmed with 1 inch of stem remaining attached 

¼ cup shallot, minced 

¼ cup crumbled feta cheese 

2 Tbsp. fresh parsley, minced 

2 Tbsp. olive oil 

1 Tbsp. balsamic vinegar 

1 Tbsp. red wine vinegar 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Wrap each beet in aluminum foil.  Place the wrapped beets on a baking sheet and place the baking sheet in the preheated oven.  Bake the beets for 45 minutes to 1 hour or until the beets are easily pierced with a fork.  Remove the cooked beets from the oven and allow then to cool until you can handle them.  When the beets have cooled peel the beets and cut them into ¼ inch slices.  While the beets are cooking make the dressing by whisking the shallot, parsley, olive oil, balsamic vinegar and red wine vinegar together in a bowl. Season the dressing with salt and pepper to taste.  To assemble the beets with feta cheese place the warm sliced beets in a serving dish.  Pour the dressing over the beets, toss to coat, and sprinkle the beets with the feta cheese.

Beet Bean and Apple Salad 

1 8.25 oz. can sliced beets, drained and diced  

1 15 oz. can cut green beans, rinsed and drained 

1 large Granny Smith apple, cored, peeled and diced 

1 teas. olive oil 

2 Tbsp. apple cider vinegar 

Stir the olive oil and vinegar together.  Combine the beets, green beans and apple in a serving bowl.  Toss the olive oil and vinegar dressing over the beets, beans and apple.  Place serving bowl in refrigerator and chill for at least 1 hour before serving. 

Recipe makes 4 servings
