Chicken Breast Stuffed with Red Pepper and Prosciutto

Chicken Breast Stuffed with Apple and Brie 

4 boneless skinless chicken breasts 

4 slices Brie cheese 

1 small apple, cored and sliced thin 

3 Tbsp. butter 

1 cup light apple juice 

1 cup chicken broth 

1 ½ Tbsp. flour 

salt and pepper to taste 

 

Preheat oven to 450 degrees F.  Spray a baking pan with cooking spray.  Make pockets on the underside of each chicken breast between the breast and the tenderloin.  Place a large, non-stick skillet over medium-high heat and add 1 tablespoon of butter to the skillet.  Add the apples to the warm butter in the skillet and sauté until the apples have softened.  Remove skillet from heat and set aside.  Place one slice of Brie and several apple slices into the pocket of each chicken breast.  Season the chicken breasts with salt and pepper on both sides.  Pat a little flour on each side of the chicken breast.  Return the skillet to the stove over high heat and add 1 tablespoon of butter to the skillet.  When the butter is hot add the chicken breasts to the skillet and brown them on both sides.  Transfer the chicken to the baking pan, stuffed side down, and place the pan in the preheated oven.  Bake the chicken breasts for 12-14 minutes.  While the chicken breasts are baking pour the apple juice and chicken broth into a saucepan placed over high heat.  Bring this mixture to a boil and continue boiling until the liquid is reduced to about 1 ½ cups.  Swirl in the remaining butter.  Season the sauce to taste with salt and pepper.  Serve the sauce with the chicken breasts.  Recipe makes 4 servings  Estimated WW Smart Points Blue, Green or Purple is 9 per serving 

 

Chicken Breast Stuffed with Red Pepper and Prosciutto 

8 thin chicken breast cutlets (about 3 oz. each) 

4 thin slices prosciutto, cut into halves 

4 slices reduced fat mozzarella cheese, cut into halves 

8 slices roasted red peppers (packed in water) 

24 fresh baby spinach leaves 

½ cup breadcrumbs – Italian seasoned 

Juice of 1 lemon 

1 Tbsp. olive oil 

salt and pepper to taste 

Preheat oven to 450 degrees F.  Spray a baking pan with cooking spray.  In a small bowl combine the olive oil, lemon juice and salt and pepper.  Place the breadcrumbs in another shallow bowl or on a piece of foil.  Place the chicken breasts on a work surface and place one of the half slices of prosciutto on one side of each chicken breast, then ½ slice of cheese, 1 slice of roasted red pepper and 3 spinach leaves.  Roll the chicken breasts and place them seam side down on your workspace.  Dip the chicken into the olive oil and lemon juice mixture and then into the breadcrumbs.  Place coated chicken breasts in the prepared baking pan and place pan in preheated oven.  Bake chicken breasts for 25-30 minutes.  Recipe makes 8 servings  Estimated WW Smart points Blue, Green or Purple is 4 per serving
