Deli Meat Pie 

2 9-inch unbaked pie crusts 

1 lb. ricotta cheese 

4 oz. mozzarella cheese, grated 

1/8 cup Parmesan cheese, grated 

½ lb. cooked ham, chopped 

¼ lb. Genoa salami, chopped 

1/8 lb. prosciutto, chopped 

3 eggs 

Preheat oven to 325 degrees F.  Line a 9-inch pie pan with one of the unbaked pie crusts.  Place the ricotta cheese in a large mixing bowl and then add the eggs one at a time while mixing at low speed.  Stir in the ham, mozzarella, salami and prosciutto until all ingredients are well combined.  Spoon the mixture into the pie crust and sprinkle the Parmesan cheese over the pie.  Cover the pie with the remaining unbaked pie crust.  Crimp the edges of the pie and cut steam vents in the top of the pie.  Place pie pan in preheated oven and bake until the crust is golden brown, about 30 minutes.

Taco Pie 

½ lb. extra lean ground beef 

1 9-inch deep dish pie crust, thawed 

½ 16-oz. can refried beans (8 oz.) 

½ medium onion, chopped 

½ cup crushed tortilla chips 

½ cup shredded cheddar cheese 

1 cup shredded lettuce 

1 medium tomato, diced 

sour cream, optional 

black olives, optional 

Preheat oven to 350 degrees F.  Line a 9-inch deep dish pie pan with the unbaked pie crust.  Place pan in oven and bake the crust according to package directions, but only bake the crust for one-half the time specified.  Place a large skillet over medium-high heat and cook the ground beef and onion until the ground beef is evenly browned.  Drain excess liquid.  Place the refried beans in the partially baked pie crust.  Top the refried beans with the ground beef and onion and then the crushed tortilla chips and cheddar cheese.  Place pie pan in preheated oven and bake for 15-20 minutes or until the crust is golden brown and the cheese is bubbly.  Remove baked pie from oven and top with lettuce, tomato and sour cream and olives.

Ham and Cheese Pie 

2 8oz. packages refrigerated crescent roll dough 

1 lb. deli ham, sliced 

1 lb. cheddar cheese, sliced 

1 egg. 

1 Tbsp. water 

salt and pepper to taste 

Preheat oven to 350 degrees F.  Spray a 9×13-inch baking sheet with cooking spray.  Unroll 1 package of the crescent roll dough onto the baking sheet.  Pinch the seams together and stretch the dough to fit the baking sheet.  Cover the dough with a layer of cheddar cheese slices top this layer of cheese with a layer of the ham and then cover the ham with the remaining cheese slices.  Unroll the second roll of crescent dough onto a sheet of wax paper on a work surface.  Pinch the seams of the dough together and place the top sheet of dough over the cheese layer on the baking pan.  (Using the wax paper to lift this dough layer makes it easier) Press the edges of the top and bottom crusts together with a fork to seal.  Make slits in top crust to allow steam to escape.  Whisk the egg and water together and add salt and pepper to taste. Brush the egg wash over the dough.  Place baking sheet in preheated oven and bake until the crust is golden brown, about 15 minutes.
