Hot Milk Cake and 1-2-3-4 Cake 

Years ago there were no box cake mixes.  If you wanted a cake made at home it had to be made from scratch.  Two cake recipes that have been popular for generations and are still the favorites of many people today are the hot milk cake and the 1-2-3-4 cake. 

Hot Milk Cake 

  • 2 cups flour
  • 2 tsp baking powder 
  • 1 cup milk
  • ½ pound butter or margarine 
  • 4 eggs
  • 2 cups sugar 
  • 2 tsp vanilla 

Grease and flour cake pan and set aside.  Heat oven to 350 degrees   Place milk and butter in saucepan and heat over low heat until butter is melted and milk is hot. Do not allow this mixture to boil.  Meantime, beat eggs until slightly thickened, slowly beat in sugar.  Blend in the flour. Stir in hot milk and butter.  Add the vanilla and then stir in the baking powder.  Pour cake batter into prepared pan and bake.  If using a tube pan the baking time will be approximately 35 minutes.  Insert a toothpick into center of cake to test for doneness.  Toothpick will come out clean when cake is done. 

This cake can be made in a sheet pan, 2-layer pans or you can make 12 cupcakes.  Baking time will vary.  The layer pans will take about 20 minutes and the cupcakes about 15 minutes.  Allow cake to cool in pan for a few minutes.  Remove cake from pan and cool completely.  After cake is cool spread with your favorite frosting. 

1-2-3-4 Cake 

  • 1 cup butter or margarine, softened
  • 2 cups sugar 
  • 3 cups sifted all-purpose flour
  • 4 eggs 
  • 2 teas baking powder
  • ¼ teas salt 
  • 1 cup milk
  • 2 teas vanilla 

Grease and flour two 8 or 9-inch layer pans or 1 tube pan and set aside.  Heat oven to 350 degrees.  Cream butter or margarine together with the sugar.  Add the eggs, one at a time, beating after each egg is added.  Combine the milk and vanilla in small glass.  Combine salt, baking powder and flour.  Add the dry ingredients to the eggs and butter mixture alternating with the combined milk and vanilla mixture.  Pour cake batter into prepared pans and bake until toothpick inserted into cake comes out clean. 

If using a tube pan baking time will be approximately 45 minutes.  For layer pans the time will be approximately 30 minutes.  

Allow cake to rest in pan for a few minutes and then remove cake from pan and cool. completely When cake is cool spread with your favorite frosting. 

Buttercream Frosting 

  • 1/3 cup butter or margarine
  • 1 lb (1 box) 10X sugar 
  • 1 teas vanilla
  • 2 to 4 Tbsp milk or cream 

Cream butter and vanilla.  Gradually beat in sugar and milk until frosting is spreading consistency. 

Chocolate Frosting 

  • 2 squares (2 ounce) unsweetened chocolate
  • ½ cup butter or margarine 
  • 1 lb (1 box) 10X sugar
  • 2 to 3 Tbsp milk 
  • 1 teas vanilla 

In small saucepan over low heat melt the chocolate and butter together.  Beat together the melted chocolate and butter with the sugar and vanilla and milk.  Add milk gradually and beat mixture until frosting is of spreading consistency.
