Pork Chop Skillet Dinner

Kielbasa Skillet Dinner 

1 15 oz. package kielbasa sausage 

½ head broccoli 

3 potatoes 

½ onion, chopped 

salt and pepper to taste 

Slice the kielbasa.  Cut the broccoli into florets.  Peel and slice the potatoes.  Spray a large skillet with cooking spray and heat the skillet over medium-low heat.  Add the onions to the hot skillet and cook and stir the onions until translucent, about 5 minutes.  Add the sliced kielbasa to the skillet and cook until the sausage is lightly browned, about 5 minutes, stir occasionally.  Stir the broccoli and potatoes into the sausage mixture in the skillet and season to taste with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes.  Stir the mixture and continue to cook for an additional 10-15 minutes until the vegetables are completely tender.

Irish Skillet Dinner 

1 lb. extra lean ground beef 

2 slices bacon, diced 

4 cups chopped cabbage 

1 20 oz. package shredded hash brown potatoes (like Simply Potatoes) 

½ cup chopped onion 

2 Tbsp. vegetable oil 

1 cup beef broth 

¼ cup apple juice (may substitute water) 

Pinch of salt 

Heat the oil in a large non-stick skillet over medium-high heat.  Add the hash brown potatoes and cook according to package directions.  Spray another non-stick skillet with cooking spray and place over medium-high heat.  Add the bacon, ground beef and onion to the skillet and cook until the meat is browned.  Drain any excess grease and add the cabbage, beef broth, apple juice and salt to the ground beef mixture.  Reduce heat to low, cover skillet and cook until the cabbage is tender.  Stir in the cooked hash browned potatoes.   

Recipe makes 6 servings 

Pork Chop Skillet Dinner 

4 boneless pork chops 

1 6 oz. package long grain and wild rice mix with herbs 

1 15.25 oz. can corn, undrained 

1 14.5 oz. can diced Italian style tomatoes, undrained 

3 Tbsp. butter or margarine 

1 ¼ cups water 

Place a large skillet over medium heat and melt the butter or margarine.  Cook the pork chops in the melted butter or margarine for 10-15 minutes until the pork chops are cooked through.  Remove pork chops from skillet and cut the pork into bite sized pieces.  Pour the water and long grain and wild rice mix with herbs into the same skillet and stir well.  Layer pork chop pieces over the rice.  Pour the corn over the pork chop layer and top with the can of tomatoes.  Cover skillet, and simmer until rice is tender and liquid is absorbed, 30-40 minutes.
