• 2 cups flour½ teas salt 
  • 1 Tbsp baking powder2 Tbsp sugar 
  • 1 cup milk1 egg, beaten 
  • 3 Tbsp butter or margarine, melted 

Preheat oven to 425 degrees F.  Spray muffin tins with cooking spray.  In mixing bowl, sift together the flour, salt, baking powder and sugar.  In small bowl combine the milk, beaten egg and butter or margarine.  Add liquid mixture to dry mixture.  Stir until batter is combined, but not smooth.  You want the batter to still be lumpy. Fill muffin tins two-thirds full.  Bake 20-25 minutes.  Makes 12 muffins. 

Raisin Bran Muffins 

  • 1 -15 oz box raisin bran1 cup oil 
  • 1 qt buttermilk5 teas baking soda 
  • 3 cups sugar4 eggs 
  • 5 cups flour1 ½ tsp cinnamon 

Preheat oven to 400 degrees F.  Spray muffin tins with cooking spray or line muffin pans with paper liners.  In bowl sift together the flour, sugar, and baking soda.  In large bowl beat the eggs well and add the oil and milk.  Stir to combine well.  Add the dry ingredients to the liquid ingredients.  Stir in the raisin bran cereal and cinnamon.  Fill prepared muffin tins three-quarters full.  Bake 15-20 minutes.  Recipe makes 48 muffins. 

This batter may be kept in a covered container in the refrigerator up to six weeks.  You can simply bake as many muffins as you want at any time.  Also, the baked muffins will freeze very well. 

Chocolate Chip Muffins 

  • 1 ½ cups flour1 cup milk 
  • 1 cup chocolate chips½ cup sugar 
  • 3 teas baking powder¼ teas salt 
  • ½ cup melted butter1 egg 

Preheat oven to 375 degrees F.  Spray muffin tins with cooking spray.  Mix dry ingredients together.  Combine the egg, milk and butter.  Stir liquid mixture into dry ingredients.  Stir in chocolate chips.  Fill muffin tins about two-thirds full.  Bake 15-20 minutes.  This recipe makes about 10 muffins.  Place a little water in any empty muffin cups in pan when baking. 

Blueberry or Raspberry Muffins 

  • 1 cup either blueberries or raspberries½ cup vanilla yogurt 
  • ¼ cup milk1 egg 
  • ½ cup brown sugar, packed firmly¼ cup oil 
  • 1 ¾ cups flour1 Tbsp baking powder 
  • ¼ tsp. salt¼ tsp baking soda 

Preheat oven to 400 degrees F.  Spray muffin tins with cooking spray or line with paper liners.  Combine yogurt, milk, oil, brown sugar and egg in bowl.  In large bowl combine the flour, baking powder, salt and baking soda.  Gently fold in the berries.  Add the liquid mixture to the dry mixture and stir until moistened.  Spoon mixture into prepared muffin tins.  Top batter with crumb topping. (Recipe follows) Bake 20-25 minutes.  Makes about 12 muffins.

Topping for berry muffins 

  • ¼ cup flourdash or two cinnamon 
  • 2 Tbsp brown sugar, firmly packed 
  • 2 Tbsp butter or margarine, softened 
  • Combine all ingredients and mix until mixture is crumbly.  Sprinkle over the berry muffin batter.
