Mushrooms Stuffed with Sausage and Broccoli Rabe
Easy Tossed Mushrooms

Mushrooms Stuffed with Philly Cheesesteak 

4 medium portobello mushrooms (without cracks) 

3 oz. shredded mild cheddar cheese 

6 oz. sirloin steak sliced thin 

2 oz. light cream cheese, softened 

¾ cup diced onion 

¾ cup diced green pepper 

¼ cup light sour cream 

2 Tbsp. light mayonnaise 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray a baking sheet with cooking spray.  Remove the steams from the mushrooms and scoop out the gills.  Wipe off any dirt from the mushrooms.  Spray the tops of the mushrooms with cooking spray and season with salt and pepper.  Season the steak slices on each side with salt and pepper.  Spray a large skillet with cooking spray and place over high heat.  When the pan is very hot add the steak and cook on the high heat for 1-1 ½ minutes on each side, or until the steak is cooked through.  Remove steak from heat and set aside. Cut thin steak slices into smaller pieces.   Reduce heat to medium-low and again spray the skillet.  Sauté the onions and peppers in the skillet until soft, 5-6 minutes.  Place mushrooms on prepared baking sheet.  Combine all the ingredients in a medium bowl and then transfer about ½ cup of this mixture to each of the mushroom caps.  Place baking sheet in oven and bake for about 20 minutes or until the mushrooms are tender and the cheese has melted.

24 baby bella mushrooms (pull stems, chop stems and set aside, wipe off mushroom caps) 

1 lb. sweet Italian chicken sausage (casing removed) 

1 large shallot, chopped 

3 cups broccoli rabe  (remove and discard large stems, chop thinner stems) 

2 cloves garlic, minced 

3 Tbsp. grated Parmesan cheese 

3 Tbsp. plain breadcrumbs 

¼ teas. crushed red pepper flakes (or to taste) 

1 ½ Tbsp. chopped fresh oregano 

2 Tbsp. chopped fresh parsley 

1 oz. white wine 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray a baking sheet with cooking spray.  Place a large skillet sprayed with cooking spray over medium-high heat.  Add the sausage to the skillet and break up the sausage meat into small pieces.  Add the shallots and broccoli rabe to the skillet and continue breaking the sausage apart.  Cook for about 7 minutes.  Add the garlic, chopped mushroom stems, salt, peppers, oregano, parsley and wine and cook over medium-low heat for about 10 minutes.  Remove the skillet from the heat and place this mixture into a mixing bowl.  Allow the sausage mixture to cool for about 10 minutes.  When sausage mixture has cooled add the breadcrumbs and parmesan cheese to the sausage mixture and mix well.  Place the mushrooms caps on the prepared baking sheet.  Heap each mushroom cap with the sausage mixture.  Place baking sheet in oven and bake for 20 minutes.

Easy Tossed Mushrooms 

1 lb. white button mushrooms 

¼ cup dry Italian-style breadcrumbs 

2 Tbsp. Parmesan cheese 

2 Tbsp. Italian parsley, minced 

¼ teas. thyme 

1 clove garlic, minced 

2 Tbsp. olive oil 

Salt and pepper to taste 

Olive oil spray 

2 Tbsp. water 

Preheat oven to 350 degrees F.  Slice off the bottom of the mushroom steams.  Gently remove any dirt from the mushrooms using a moist paper towel.  Slice the mushrooms into either halves or quarters (depending on the size of the mushroom).  Place the 2 tablespoons of water in the bottom of a 13×9 baking dish.  Place the mushrooms on top of the water in a single layer. 

Combine the breadcrumbs, Parmesan cheese, parsley, thyme, garlic and salt and pepper in a small bowl.  Sprinkle the breadcrumb mixture over the mushrooms in the baking dish.  Drizzle the olive oil over the mixture in the baking dish and then spray the top with the olive oil baking spray.  Place baking dish in oven and bake, uncovered, until mushrooms are golden, about 20 minutes.  Tossed mushrooms may be served either hot or cold.
