Oatmeal Pie
Baked Oatmeal Stuffed Apples   

Oatmeal and Applesauce Squares 

2 cups quick cooking oats 

1 cup applesauce 

Preheat oven to 350 degrees F. Spray a baking dish with cooking spray. In a bowl combine the applesauce and oatmeal and mix until evenly moistened. Spread this oat mixture into the prepared baking dish. Place baking dish in preheated oven and bake about 10 minutes until the mixture is no longer sticky. Flip the applesauce oatmeal onto a work surface and cut into squares. Allow squares to cool. 

Recipe makes 4 servings 

Oatmeal and Jam Squares 

2 cups rolled oats 

1 cup butter or margarine, softened 

1 cup packed brown sugar 

1 ¼ cups flour 

¾ cup fruit preserves, flavor of your choice 

½ cup chopped nuts, optional 

¾ teas. baking soda 

1 teas. ground cinnamon 

Preheat oven to 400 degrees F. Spray a 9×13-inch baking dish with cooking spray. Cream the butter or margarine and brown sugar together until smooth. In a separate bowl combine the flour, oats, baking soda and cinnamon. Fold the oat mixture into the creamed mixture. Stir in the walnuts. Set aside 2 cups of the mixture and press the remaining oat mixture into the prepared baking pan. Spread the fruit preserves over the mixture in the baking pan and crumble the remaining oat mixture over the top. Please pan in the preheated oven and bake for 25-30 minutes until the mixture has browned. Cool mixture before cutting into squares.

Oatmeal Pie 

¾ cup quick cooking oats 

2 eggs beaten 

¾ cup corn syrup 

¼ cup packed brown sugar 

½ cup flaked coconut 

¼ cup butter or margarine, softened 

salt to taste 

1 9-inch unbaked pie crust 

Preheat oven to 325 degrees F. Place unbaked pie shell in a pie pan. Mix the eggs, corn syrup, brown sugar, coconut, oats, butter or  margarine and salt together. Pour this mixture into the unbaked pie shell. Place pie pan in preheated oven and bake for about 45 minutes or until pie is golden in color and a knife inserted into the center of the pie comes out clean.

Baked Oatmeal Stuffed Apples 

4 apples 

1 cup rolled oats 

¼ cup brown sugar 

¼ cup butter or margarine 

1 teas. ground cinnamon 

Preheat oven to 350 degrees F. Core each apple and make a large well in the center of the apple. Spray a rimmed baking dish with cooking spray and place the apples in the baking dish. In a bowl mix together the oats, brown sugar, and cinnamon. Cut in the butter or margarine until everything is evenly combined. Spoon one-quarter of the oat mixture into each apple. Place baking dish in preheated oven and bake about 30 minutes until the apples are tender and the filling is bubbling.
