Peanut Butter Granola Bars

Fruit and Nut Granola Bars

Peanut Butter Granola Bars 

½ cup peanut butter 

½ cup almonds 

2 teas. flax seed 

½ cup honey 

½ cup Splenda brown sugar blend 

1 teas. vanilla 

3 cups rice krispies 

½ cups quick oatmeal 

Spray either an 11×7 or 13×9-inch baking pan with cooking spray.  Combine the rice krispies, nuts and oats in a large bowl.  Place a saucepan with the brown sugar and honey over medium heat.  Stir the sugar and honey mixture with a wooden spoon and bring it to a boil.  Remove the mixture from the heat and stir in the vanilla and peanut butter until well blended.  Pour this peanut butter mixture over the dry ingredients in the bowl and mix to combine.  Transfer the mixture to the prepared pan.  Allow the granola bars to cool and cut into 30 bars.  Recipe makes 30 servings 

Oatmeal Protein Balls 

1 cup dry oats 

2 scoops vanilla protein powder 

1/3 cups chopped walnuts 

¼ cup dried cranberries 

3 Tbsp. peanut butter 

3 Tbsp. ground flaxseed 

1 Tbsp. honey 

1/3 cup nonfat milk 

In a large bowl mix together the oats, protein powder, walnuts, cranberries and flaxseed.  Set aside when well combined.  In a small bowl stir the honey and peanut butter together.  Stir in the milk a little at a time, stirring after each addition until smooth.  Pour the milk mixture over the oat mixture and combine thoroughly.  Form this mixture into 10 balls.  Refrigerate.  Recipe makes 10 servings. 

Fruit and Nut Granola Bars 

1 ½ cups puffed wheat cereal 

½ cup Grape Nuts cereal 

1 ½ cups old-fashioned oats 

½ cup whole almonds, chopped 

¼ cup flaxseed 

¼ cup sunflower seeds 

½ cup dried fruit 

3 Tbsp. peanut or almond butter 

2 Tbsp. honey 

4 Tbsp. agave nectar 

3 Tbsp. brown sugar 

1 Teas. vanilla extract 

Preheat oven to 325 degrees.  Line an 8 or 9-inch baking dish with parchment paper.  Allow the paper to hang over the pan on opposite sides to allow for easy removal of the bars.  Place a small saucepan over medium-low heat.  Combine the nut butter, honey, agave nectar, brown sugar and vanilla in the pan and heat, stirring frequently, until the brown sugar dissolves and the nut butter is smoothly incorporated into the mixture.  In a large bowl combine the puffed wheat, Grape Nuts, oats, chopped almonds, flaxseed, sunflower seeds  and dried fruit.  Pour one-half of the honey mixture over this cereal mixture and use a rubber spatula to combine.  Pour the remaining honey mixture over this oat mixture and continue stirring with the spatula until everything is thoroughly blended.  Pour this mixture into the prepared pan and use the spatula to press it down firmly.  Place the baking pan in the preheated oven and bake until the granola bars are golden brown all over, about 20-25 minutes.  Remove the pan from the oven and use the rubber spatula to press down the granola bars.  Let the bars cool completely in the pan.  When the bars are cool use the overhanging parchment paper to lift the bars out of the pan.  Use a sharp knife to cut the granola into 12 bars.  Bars can be kept for a week if wrapped and air-tight or they can be wrapped and stored in the freezer for several months in a plastic bag.  Recipe makes 12 servings.
