Spicy Beef and Veggie Stir Fry

Pork and Veggie Stir Fry 

1 lb. boneless pork chops sliced into thin strips 

½ cup snow peas 

1 cup shitake mushrooms, sliced 

½ red bell pepper, sliced 

½ yellow bell pepper, sliced 

3 Tbsp. low sodium soy sauce 

juice from ½ lime 

2 teas. corn starch 

½ teas. honey 

1 teas. toasted sesame oil 

2 teas. rice vinegar 

2 teas. sriracha 

2 teas. oil 

2 teas. grated ginger 

3 cloves garlic, crushed 

Place the corn starch and 1 ½ teaspoons of soy sauce in a bowl and mix.   Add the pork strips to the soy sauce and toss the pork strips in the corn starch and soy sauce to coat.  Set the coated pork strips aside.  Combine the balance of the soy sauce, the lime juice, sesame oil, honey, vinegar and sriracha in a small bowl and mix well.  Set this sauce mixture aside.  Place a large nonstick skillet or wok over high heat.  Add 1 teaspoon of the oil to the skillet or wok and then add the pork to the hot oil.  Cook the pork until it has browned, turning frequently, about 6-7 minutes.  Remove the pork from the pan and set aside.  Add the remaining teaspoon of oil to the pan together with the ginger, garlic, snow peas, bell peppers and mushrooms and stir.  Pour the sauce over the vegetables.  Reduce heat to low and heat the vegetables in the sauce for 2 minutes.  Return the cooked pork to the skillet or wok and stir.

½ lb. lean sirloin beef, cut into thin strips 

1 large bell pepper, sliced 

1 medium tomato, sliced into wedges 

1 medium red onion, sliced into thick strips 

1 large jalapeno pepper, ribs and seeds removed and chopped 

2 cloves garlic, crushed 

¼ cup chopped cilantro 

¼ teas. cumin 

1 teas. olive oil 

1 ½ Tbsp. low sodium soy sauce 

1 Tbsp. apple cider vinegar 

Salt and pepper to taste 

Season the beef strips with salt and pepper and cumin.  Place a nonstick skillet or wok over high heat.  Add the olive oil to the pan and when it is hot add the beef strips.  Cook the beef until it is browned on both sides, about 2 minutes per side.  Add the onion, bell pepper, jalapeno and garlic and cook for an additional 2 minutes.  Add the tomato, soy sauce and vinegar and cook for 1 more minute.  If needed, add more salt and pepper.  Garnish with the cilantro.
