Pumpkin Chocolate Chip Cookies
Banana Nut Cookies
Nutella Almond Butter Cookies

Pumpkin Chocolate Chip Cookies 

½ cup whole wheat pastry flour 

½ cup all-purpose flour 

½ cup sugar 

½ cup brown sugar 

1 egg white 

2 Tbsp. butter or margarine, melted 

2 Tbsp. pumpkin puree 

½ cup mini chocolate chips 

¼ teas. baking soda 

2 teas. pumpkin pie spice 

1/8 teas. salt 

1 teas. vanilla 

Preheat oven to 350 degrees F.  Lightly spray  cookie sheets with cooking spray.  Combine the whole wheat flour, all purpose flour, baking soda, salt and pumpkin spice in a large bowl and stir to blend.  In another bowl whisk together the brown sugar, granulated sugar, melted butter, egg white, pumpkin puree and vanilla until light and fluffy.  Whisk one-half the dry ingredient into the wet ingredients and then whisk in the second half of the dry ingredients into the wet ingredients.  Whisk until the batter is very well blended.  If the batter does not look smooth, but looks crumbly, add a drop of water at a time until the batter smooths out.  Drop the batter by level spoonsful about 1-inch apart on the prepared baking sheets.  You should have 24 cookies.  Place cookie sheets in preheated oven and bake for 8-10 minutes.  Remove pans from oven and allow cookies to stand for 5 minutes before removing the cookies from the pans to cool on wire racks.  Recipe makes 24 cookies, 12 servings of 2 cookies each serving  Estimated  WW Smart points Blue, Green or Purple is 7 per serving 

Banana Nut Cookies 

2 medium ripe bananas, mashed 

1 cup uncooked quick oats 

¼ cup crushed walnuts 

Preheat oven to 350 degrees F. Spray a cookie sheet with cooking spray.  Combine the oats and mashed banana in a bowl.  Fold in the walnuts.  Place the batter by level tablespoons on the cookie sheet.  You should have 16 cookies.   Place cookie sheet in preheated oven and bake for 15 minutes.  Recipe makes 16 cookies, 8 servings of 2 cookies each serving  Estimated  WW Smart points Blue, Green or Purple is 3 per serving 

Nutella Almond Butter Cookies 

½ cup Nutella 

½ cup chunky almond butter 

1/3 cup sugar 

1 large egg, beaten 

2 Tbsp. unsweetened cocoa powder 

Preheat oven to 350 degrees F.  Spray 2 cookie sheets with cooking spray.  In a mixing bowl, mix the Nutella, almond butter, cocoa powder, sugar and egg until well combined .  Spoon the batter using 1 level tablespoon of the batter for each cookie onto the baking sheet about 1-inch apart.  You should have 24 cookies.  Flatten the dough with the tines of a fork and make a crosshatch pattern on the cookies.  Place cookie sheet in the preheated oven and bake for about 8-10 minutes or until cookies are golden around the edges.  Let cookies cool before removing from the cookie sheets.  Recipe makes 24 cookies, 12 servings of 2 cookies each   Estimated WW Smart points Blue, Green or Purple is 4 per serving
