Spiced Pumpkin Seeds 

2 cups raw whole pumpkin seeds 

1 ½ teas. margarine or butter, melted 

2 teas. Worcestershire sauce 

½ teas. salt 

1/8 teas. garlic salt 

Preheat oven to 275 degrees F.  In a medium bowl combine the margarine or butter, salt, garlic salt, Worcestershire sauce and pumpkin seeds and mix well.  Place the seeds in a shallow baking dish and place dish in preheated oven.  Bake for about 1 hour stirring occasionally. 

Recipe makes 8 servings 

Roasted Chickpeas 

1 12 oz. can chickpeas (garbanzo beans) rinsed and drained 

2 Tbsp. olive oil 

Salt to taste (optional) 

Garlic salt to taste (optional) 

Cayenne pepper to taste (optional) 

You can use any seasoning of your choice 

Preheat oven to 450 degrees F.  use a paper towel to blot the chickpeas dry.  In a bowl toss the chickpeas with the olive oil and season to taste.  Spread the chickpeas on a baking sheet.  Place the baking sheet in the preheated oven and bake for 30-40 minutes or until browned and crunchy.  Watch carefully during the last few minutes to avoid burning. 

Recipe makes 4 servings 

Sugar Coated Pecans 

1 lb. pecan halves 

1 egg white 

1 Tbsp. water 

1 cup white sugar 

¾ teas. salt (optional) 

½ teas. ground cinnamon 

Preheat oven to 250 degrees.  Spray a baking sheet with cooking spray.  In a mixing bowl whip the egg white and water together until frothy.  In another bowl mix the sugar, salt and cinnamon together.  Add the pecans to the egg whites and stir to coat the nuts evenly.  Remove the nuts from the egg white and toss them in the sugar mixture until coated.  Spread the coated nuts on the prepared baking sheet.  Place baking sheet in preheated oven and bake for about 1 hour.  Stir the nuts every 15 minutes while they are baking. 

Recipe makes 12 servings 

Potato Chips 

1 potato sliced paper thin 

1 Tbsp. vegetable oil 

Salt to taste, optional 

Seasoning of your choice to taste, optional 

Pour the vegetable oil into a plastic bag and add the potato slices.  Shake bag to coat potatoes.  Spray a large dinner plate with cooking spray.  Arrange the potato slices in a single layer on the plate.  Cook the potatoes in the microwave on high for 3-5 minutes or until the potatoes are lightly browned.  If the potatoes are not browned, they will not become crisp.  Times will vary depending on the power of your microwave.  Remove chips from plate and toss with salt or your favorite seasoning.  Let cool.  Repeat process with remaining potato slices.
