Strawberries can be enjoyed just as they come from the garden or they can be incorporated in many dishes including desserts and salads.  You might want to try one or more of these yummy strawberry recipes. 

Strawberry Pretzel Jell-O 

  • 2 cups crushed salted pretzels
  • ¾ cups melted margarine or butter 
  • 8 oz cream cheese, softened
  • 1 cup 10X sugar 
  • 1 medium container whipped topping
  • 2 small or 1 large strawberry Jell-O 
  • 2 cups boiling water
  • 1-quart strawberries 

Wash and hull the strawberries and slice.  Set aside.  Crush the pretzels in a plastic bag with a rolling pin or nut crusher.  Your salad will have a better flavor if you crush the pretzels finely.  Heat oven to 400 degrees.  Grease a 9×13 baking dish. Combine the crushed pretzels with the melted butter or margarine and pat this mixture into the baking dish.  Bake for 8 minutes.  Do not overbake.  Allow this layer to cool.  Cream together the cream cheese and sugar.  Fold in the whipped topping.  Spread this cream cheese mixture over the cooled pretzel layer.  Dissolve the Jell-O in the boiling water.  Add the sliced strawberries to the Jell-O.  Allow this to sit until slightly set.  Spread Jell-O and strawberries over the pretzel layer and the cream cheese layer.  Refrigerate for several hours before serving. 

Strawberry Trifle 

If you have a trifle dish use it for this dessert.  If you don’t have a trifle dish use a clear bowl to showcase the trifle.  

  • 1 box yellow cake mix1-pint strawberries 
  • 1 large box instant vanilla pudding
  • 1 12 oz container whipped topping 

Prepare cake mix according to package directions for a 2-layer cake.  Prepare the vanilla pudding and refrigerate.  Once the cake is baked and cooled break or cut the cake into square pieces.  In your serving dish assemble the trifle as follows:  first a layer of cake pieces, then pudding, then strawberries, then whipped topping.  Repeat the layers and end the trifle with a whipped topping layer. You can arrange some strawberries on top as a garnish. 

Berry Delight 

  • 1 ½ cups graham cracker crumbs
  • 1/2 cup sugar 
  • 1/3 cup melted butter or margarine
  • 2 Tbsp milk 
  • 1 8oz pkg cream cheese, softened
  • 3 ½ cups whipped topping 
  • 2 pints strawberries
  • 2 small boxes vanilla instant pudding 
  • 3 ½ cups cold milk 

Wash and hull strawberries and cut in half.  Combine graham cracker crumbs with sugar and melted butter.  Press this mixture into bottom of 12×9 inch pan.  Chill the crust.  Next beat the cream cheese with ¼ cup sugar and the 2 tablespoons of milk until smooth.  Fold in half the whipped topping.  Spread this mixture over the chilled crust.  Arrange the strawberries over the cream cheese mixture.  Prepare the vanilla instant pudding with the 3 ½ cups of cold milk.  Pour the pudding over the berries.  Chill the berry delight for several hours or overnight.  Spread remaining half of the whipped topping over pudding.  Garnish with strawberries. 

Chocolate Dipped Strawberries 

  • 16 ounces either dark or milk chocolate chips
  • 2 Tbsp butter or margarine 
  • 1 pound of fresh strawberries with leaves 

Wash the strawberries leaving the leaves intact.  Pat the berries dry.  In top of double boiler melt the chocolate chips with the butter or margarine.  Stir until smooth. Insert a toothpick into the top of the strawberry so you can hold it.  Then dip the strawberry into the melted chocolate.  You want the chocolate to come up about 3/4 way on the strawberry. Place the completed strawberry stem side down on wire rack in refrigerator until cool.
