Chicken Roll-Ups

Stuffed Burgers 

2 lb. extra lean ground beef 

8 slices cheddar cheese, divided 

1 10 fluid oz. bottle steak sauce (such as A-1), divided 

2 Tbsp. fajita seasoning 

2 Tbsp. dried minced onion 

2 4 oz. cans chopped green chilies, drained 

1 4 oz. can sliced mushrooms, drained 

 

In a medium bowl mix together the ground beef. ¼ cup steak sauce, fajita seasoning and dried onion until well blended.  Form this mixture into 8 patties.  Set 4 patties aside.  On the other 4 patties place one slice of cheese, some of the green chilies and some of the mushrooms.  Place the  4 patties that were set aside over the tops of the first 4 patties and press down to seal the edges of the patties, so the stuffing stays inside.  Preheat a grill for low heat and lightly oil the grate.  Place the patties on the grill and let them brown on one side and then turn them over and brown the burger patties on the other side.  Once the top side is browned brush the tops with thremaining steak sauce and continue to grill the burgers for about 30 minutes.  Baste frequently with the steak sauce until the meat is no longer pink and the juices run clear.  When the meat is ready to come off the grill place the remaining slices of cheese over the top of each burger.  Recipe makes 4 servings 

Chicken Roll-Up 

8 thin boneless chicken breast cutlets (about 3-4 oz. each) 

2 cups broccoli florets, finely chopped 

2 slices cheddar cheese (cut in halves to make 4 pieces of cheese) 

1 egg 

¾ cup whole wheat seasoned breadcrumbs 

2 teas. water 

¾ teas. kosher salt

Preheat oven to 425 degrees F.  Spray a baking sheet with cooking spray.  Place the chopped broccoli in a microwave safe dish with 1 tablespoon of water.  Cover and cook for 1 minute until the broccoli is soft.  Drain the broccoli and sprinkle it  with ¼ teaspoon of salt. If the chicken cutlets are not thin enough to roll pound them thin using wax paper and a mallet.  In a small bowl combine the egg, 2 teaspoons water and a little salt and beat with a fork.  Set aside.  Place the breadcrumbs in another bowl or on a piece of foil.  Season both sides of the chicken with a little salt.  Place one slice of cheese in the center of the chicken and top this with 2 tablespoons of the chopped broccoli.  Roll up the chicken to completely cover the cheese and use toothpicks to secure the ends.  Dip the chicken in the egg wash and then in the breadcrumbs.  Transfer the coated chicken to the prepared baking sheet and spray both sides of the chicken with cooking spray.  Bake about 25 minutes until the chicken is cooked through.
